Kilchoman Distillery - Islay's Farm Distillery

A limited-edition single malt from Kilchoman, Casado takes its name from the Portuguese word for marriage. Initially matured in 38 first-fill ex-bourbon barrels, it was then married in a pair of Portuguese red wine vats for two years before it was bottled.

Tasting Notes

NOSE: Bonfire smoke with dried apricot, Dr. Pepper, and some coastal salinity as well notes of marzipan and toffee apples underneath.

PALATE: Black pepper is cracked over smoked fish as well as lemon peel, tannic wood, and stone fruits. There's a sweet jammy element present throughout.

FINISH: Aromatic spice and red berry tartness linger.

“Kilchoman really lends itself to maturation in fortified wine casks. The rich fruity character of the casks balances nicely with the creamy citrus sweetness of our new spirit. My preference when using wine casks has always been to use fresh first fill barrels with a view to bottling the whisky relatively young. This approach means the lighter, clean flavours and fresh maritime peat smoke aren’t overwhelmed by the cask influence”
