Black Tot, Historic Solera

46.2% 700ml

Black Tot Historic Solera is a decadent and elegant rum which has been aged in oak barrels that have been seasoned with Pedro Ximénez and Oloroso Sherries, before being further aged through a traditional 3-tier 70-year-old Sherry cask Solera process.

Solera's magic lies in blending rums of various ages. The younger rum interacts with the concentrated essence of older expressions, acquiring richer characteristics with each step. This continuous marriage between these various ageing rums results in a rum showcasing remarkable depth and character.

Black Tot's Historic Solera boasts flavours of Dark Chocolate, Plums and Figs. It is best enjoyed neat and in bold, rum-forward cocktails.

Blend Components:

Guyana Style Aged: 40% 3-5 year Guyana pot/column still

Barbados: 35% 5 Year pot/column still

Guyana Style Unaged: 20% unaged Guyana pot/column still

Jamaica Aged: 5% 3 year high ester pot still

"A real delight for rum enthusiasts for sure, but even whisky fanatics partial to The Macallan or Dalmore should find something to like here" - Dominic Goddard-John, Berry Bros & Rudd

Nose: Initially notes of rum and raisin fudge and chocolate covered cappuccino create an unctuous feel. Dried cranberry and red currants develop with toasted cinnamon sticks and light ginger. With time sultanas, dark chocolate, and hints at cardamon spice come through.

Palate: Thick and coating with flavours of nut milk chocolate, ripe figs, and orange oil. Hints of espresso coffee complement the sweetness while pink grapefruit and lemon oil build around the heady notes of sultanas, plums and baked banana. The tropical fruit continues to build along with a rich sweetness akin to Chantilly cream with a dark chocolate drizzle.

Finish: A pleasing dryness carrying some of the light spice of nutmeg and ground cinnamon while flavour of currents and sultanas continue to linger.

The solera process, traditionally used in production of sherry, has been masterfully adapted for Black Tot Historic Solera rum, resulting in a spirit of unparalleled richness and complexity. Crafted using an authentic three-tiered, 70-year-old Sherry cask solera system, this rum boasts deep, nuanced flavours which cannot be replicated using newer, seasoned casks.

Before entering our 46-strong sherry butt solera, we further age our award-winning Black Tot Finest Caribbean rum in both oloroso and PX sherry casks for up to 2 years. From this ageing alone, the rum develops rich flavours such as dried fruit and winter spices, which is then added to our three-tier solera. After spending a year in each criadera (tier), a portion of the oldest rum is drawn for bottling. The cask is then replenished with rum from the next tier, allowing the process to continue seamlessly through the tiers.

The final criadera, known as the solera, always retains a portion of the original rum, ensuring that each bottle is a blend of rums of various ages. This method adds depth, complexity, and the unique flavours of Jerez, resulting in a consistently high-quality rum that tastes unlike any other.
